Lunch
Some people like to skip lunch these days, bearing the reason of dieting and loosing weight. Well, the only methods I know to lose weight and maintaining a healthy life is to exercise and eat. And if you like to skip meals, especially the meal that bridge the gap between breakfast dinner, you can't cook excellently.In Julia Child's own words, "You can't be a good cook and be a non-eater. I think eating is the secret to good cooking". Lunch is the best time to enjoy yourselves with energy-refilling meals high in carbohydrates. Base food items such as bread, rice, egg whites, and even sweet potatoes are essential elements of a complete lunch meal. Throw in some protein and vegetables and you can discover a haven of delicious moments during this much needed meal time.

Salad Nicoise Sandwich
Ingredients
-2-3 anchovy fillets.
-1 teaspoon of vinegar.
-4 tablespoons of extra virgin olive oil.
-3 fillets of tuna (Any kind you like. Skipjack for me).
-1 bowl of grape or cherry tomatoes, halved.
-1 bowl of grape or cherry tomatoes, halved.
-1/2 bowl of pitted olives (Preferably, buy unpitted olives and pit them yourselves. It has a more flavourful taste).
-1/4 of a red onion, thinly sliced.
-3 pinches of pepper.
-1 loaf of baguette.
How To Prepare
1. First, put the anchovies in a bowl and mash it with a fork. Do not mash it too much, leave some texture in the anchovies. Add the vinegar and 2 tablespoons of the extra virgin olive oil. Mix it together until the the tuna, vinegar, and oil has fully blended together.
2. Take another bowl and put the tuna fillets, pitted olives, tomatoes, onions , pepper, and the remaining olive oil and mash them together.
3. Cut the baguette into a considerably-lengthed piece of your choosing. Then, cut the piece length-wise for the previously made mixtures.
4. Spoon the tuna on the bottom part of the baguette piece before spooning the anchovy. After spooning the mixtures, place the top part of the baguette piece and press gently.

5. It is ready to eat. It can also be served with a handful of fresh veggies for added flavour and texture.
A Salad Nicoise in between a baguette. What can be better than that? The fresh feeling one gets when eating this simple sandwich is a special touch on its own. The semi-rough texture of the anchovy blended together with the meaty texture of the tuna, plus the multiple flavours of the cherry tomatoes and pitted olives always leaves me craving for more.
